So this post is just as much for me as it is for anyone else so I can keep all my current favorites in one spot. Since leaving my 9 to 5 I’m cooking at home a lot more. I love to cook (like LOVE it) but I get in a rut really quickly and I’m often sitting down on a Sunday to meal plan without a clue of what I want for the week. So I’ve taken to keeping a list of all my favorite recipes super handy.
Here are my top 10 Go To Meals divided into Chicken and beef dishes (sorry vegetarian friends, my husband refuses even meatless Mondays so these are all very carnivorous)
CHICKEN
Gwyneth’s Whole Roasted Chicken. This is a staple in our family and I’ve blogged about it before. Not only is it juicy and delicious for dinner with some mashed potatoes (my favorite Instant Pot recipe for those is here) and green beans but its amazing on a salad for lunch the next day. I literally make this at least twice a month.
Keto Garlic Chicken. I just made this for the first time this week and it was AMAZING. So delicious and so quick. This is ready in about 15 to 20 minutes. The only downside is you have to have a lot of fresh veggies on hand but I bet you could use canned tomatoes and frozen broccoli and spinach too?
Orange Sesame Chicken. This is from Danielle Walker’s Against All Grain cookbook. Its a crockpot meal that’s literally ready in two hours and there’s also an Instant Pot version. I use chicken breasts instead of thighs typically.
Thai Sweet Chili Wings. These have some major kick to them so you may want to ease up on the spice if that’s not your thing. Personally, I love spice so the sauce is amazing and would be great on basically anything come to think of it.
Autumn One Pan Chicken. This recipe tastes like fall to me. Its also one of those recipes that I love to make when I’m bringing a meal to someone (and its such a nice departure from the barrage of casseroles). I usually use a blend of chicken thighs and breasts for this.
Herbed Chicken Crepes. These are an oldie bud goodie. I love this recipe. Its quick. Its cheap. It tastes amazing. However, you should be warned its carby and fat laden but hey, I mean its also delicious so…
BEEF
Mongolian Beef. I’ve tried a lot of different mongolian beef recipes and this one is my favorite. I substitute coconut aminos for soy sauce (I get mine at Trader Joe’s). I even sub brown sugar for Swerve Brown Sugar to make it more Keto compliant and it still tastes amazing. Oh and I omit noodles and use whatever green veggies I have on hand. Broccoli, green beans, asparagus, zucchini noodles. Whatever you have will work.
Beef Fajitas. The Little Spice Jar’s marinade recipe is my absolute favorite. Its perfect. Instead of using chopped cilantro I use Dorot’s frozen trays. I put about 4 cubes in the microwave for 30 seconds and add to the marinade. I also use Dorot’s for basil, garlic and ginger. I HATE chopping garlic and its just so much easier. Plus it keeps forever. Win win.
Beef Short Ribs. My friend Kayla shared this recipe with me and its phenomenal. She likes to serve it over sushi rice. I triple the marinade recipe but I also use 7lbs of ribs instead of 5lbs (approximately 12 ribs). I use coconut aminos instead of soy sauce. I dust the ribs in tapioca starch and then brown them before cooking them. And while I’ve made these in a crock pot before per the recipe you can also cook them at 350 degrees for 2.5 hours in a dutch oven. Again I use Dorot ginger and garlic. I skip the fresh parsley leaves because I don’t think you need them personally.
Clean Eating Chili. This one is ready in about 30 minutes. You can easily substitute ground turkey or chicken for ground beef if you prefer.
